How often does my kitchen extract system require cleaning?

This depends on a number of various factors such as the level of usage of the cooking equipment, the type of cooking, type of extraction system etc. As a guideline, the B&ES highlight typical cleaning intervals as:
  • Heavy use 12-16 hours a day – every 3 months 
  • Moderate use 6-12 hours a day – every 6 months
  • Light use 2-6 hours per day – every 12 months

Legal requirements

The Management of Health and Safety at Work Regulations and Fire Regulations place a very strict 'duty of care' on the manager of the premises. Part of the regulations stipulates that the grease extract systems must be assessed for fire hazards and necessary action must be taken to eliminate or minimise potential risks. According to the Regulatory Reform (Fire Safety) Order 2005, minimising the fire risk by removing grease deposits with regular cleaning programmes which are devised to suit your individual kitchen needs.
Since 2004 the responsibility for risk assessment has been placed on building owners and/or occupiers. The industry accepted benchmark for the internal cleanliness of ventilation systems is the B&ES (formerly HVCA) Document TR19.
